Winter salad
Fig, prosciutto, blue cheese, beans and rocket salad
We love a tasty salad, even more when we can take advantage of some of the bold flavours and seasonal ingredients winter has to offer.
SALAD
500g fresh rocket
24 green beans, blanch and split
8 black figs, quartered
12 slices prosciutto
200g blue cheese, crumbled
½ red onion, thinly sliced
Handful of roasted walnuts (optional)
DRESSING
Equal amount olive oil
Equal amount balsamic vinegar
Salt and pepper
METHOD
1. Toss the beans and rocket in a bowl with 3/4 of the dressing then split over 4 plates.
2. Build up each salad using the other ingredients.
3. Drizzle with left over dressing to finish.
