Mr Collins is the cocktail greeting you after your wedding ceremony, or the suave confident smile which ushers you to your seat or the aged Riesling served with muscatels and a well-balanced cheese board.

What is the level of difference between destination catering vs venue?

Tommy Collins’ core belief is that your wedding should be as unique as you are. While wedding venues are very reliable, they are also very predictable and have been used by hundreds if not thousands of couples before you. 

A good friend of Tommy Collins, was going to get married at one of Melbourne’s well known wedding venues, and we are sure the result would have been fantastic. When he asked Tommy Collins what he should do, we asked him to imagine how it would feel to get married to the love of his life, at his family property and in years to come how they would share the memories and pictures with their children and be able to say “This is the exact spot where Mum and Dad got married…” His decision was easy.

It comes down to the fact that you can have a great wedding at a venue or you can have a once in a life time unique destination wedding which can never be replicated. Remember, it’s your day!

As everybody knows in sport the home team has a slight advantage as they know the lay of the land and have all their equipment on hand. We have spent years of hard work, researching and pushing to become one of Melbourne’s leading destination caterers. Our staff take everything into account, all the elements and possible outcomes of a day to make sure your wedding day is seamless, no matter what mother nature throws at us.

How do you work with your couples?

We start with a blank canvas and instead of being limited by a venue’s parameters, we allow the client to, so to speak, go wild with what they want. By sitting with the couple, we paint a picture of who they are, what they are about, nut out their food experiences and get them as close to or even exceed their expectations. 

Every experience is customized to the quirks, features and essence of the couple. If they want to replicate a chili crab at Pastis in New York, or an amazing food experience they had in South East Asia, we would create hawker style food stations at their reception. In the same way, if they wanted to re-create that first date they had at Vue du Monde, then we design an exquisite 6 course degustation, it pays to be good at all your food trades. Kind of like being a catering chameleon.

We love to throw in little surprise 'gestures' throughout the day that we know will make the experience even more special and unique.
