Dairy Flat can be exclusively for groups looking for a magical and memorable experience, a place for connection and celebration. 

The team behind Lake House Daylesford, the Wolf-Tasker family, who have long been innovators in regional Australian hospitality and tourism, are set to raise the bar for immersive, experiential luxury once again with the opening of Dairy Flat Lodge and Farm in 2020.

Dairy Flat Lodge and Farm is a 38-acre regenerative farm, set amid rolling hills in the hamlet of Musk, just a 10 minute drive from Daylesford, the property features an extensive and productive vegetable garden, a vineyard, established olive grove and an orchard of 350 heritage fruit trees. The European-style Lodge, complete with a cellar has been exquisitely decorated with custom-made furniture and offers luxurious accommodation for up to 14 guests.

Dairy Flat Lodge is an ideal destination for groups of up to 12 people accommodated in six ensuite rooms and offers a unique style of luxurious lodge and farmhouse accommodation for guests who are keen to embrace life on a productive farm, but who still want hotel-style comforts and a good cocktail at the end of the day. A live-in concierge will organise every aspect of the guests’ stay.

Immerse yourself in the beauty of the property; hay strewn rolling hills, 5 acres of vegetable, herb and cutting gardens, 300 tree olive grove, vineyard, heirloom orchard, lagoon, ornamental hedgerow gardens, wisteria walk, silver birch drive and rows of Manchurian pear .....

There is also electric bikes, a hot tub overlooking the vines and the now famous semi-underground bake house which produces a range of slow fermented sourdough, croissants, doughnuts and more each morning for guests.

The interior design focuses on craftsmanship and artisanal production with custom-made furniture, cabinetry and upholstery, and original artworks by Allan Wolf-Tasker ,botanical paintings by Alesandro Ljubicic, sculpture by bronze worker Anthony Vanderzweep and woodwork from craftsman Greg Stirling. 

Lodge guests will be able to partake in a farm tour or book into scheduled workshops on gardening, baking and bee keeping.

TARIFFS All tariffs include accommodation in the exclusive Dairy Flat Lodge, daily housekeeping service, and onsite concierge. Use of the beautiful library, lounge, dining and terraces. Also included is access to almost 40 acres of beautiful productive farmland; dedicated vegetable, herb & cutting gardens, hedgerow ornamental gardens, established vineyard, olive grove, newly planted orchard, outdoor fire pit and hot tub.

Monday – Thursday from AUD $3,990 per night for up to 12 guests Friday – Sunday & public holidays from AUD $4,590 per night for up to 12 guests A minimum 2 night stay applies to all reservations. Long stay packages including 5 or more nights available on request

Championing sustainability

Alla Wolf-Tasker AM has long been a champion of all things sustainable and local and her support of the growers and producers in and around Daylesford has been pivotal in shaping the region, as well as the Lake House menu, over the past 30+ years. Dairy Flat Farm currently supplements what existing suppliers are unable to provide, as well as allowing Alla, the Lake House chefs and the Farm’s gardeners to experiment with growing rare and interesting vegetables, fruit and herbs.One of Dairy Flat Farm’s most exciting features is the bakehouse that has been created within an existing semi underground cellar space accessed via a tunnel beneath the Lodge, and which will be operated in collaboration with Michael James( one of Melbourne’s most celebrated sourdough bakers). 

All baking for the iconic Lake House restaurant will now come from Dairy Flat as will items for the Wolf-Tasker’s more casual country café Wombat Hill House –nestled in the Wombat Hill Botanic Gardens in central Daylesford. Surplus from the bakery will also be available at Wombat Hill House for visitors to take away. Michael James will run regular sourdough baking classes on site for Lodge guests and as an extension of the Lake House Cooking School program.

Make sure to take all  the day-to-day activities of the Farm in: from the vegetable garden filled with array of seasonal delights, orchard, vineyard, olive grove, ornamental gardens, and those busy bees or simply smell the offerings baking in the bakehouse. 

The Farm will continually be full of experts in their fields, giving guests an opportunity to observe, immerse or dive deep depending on their level of interest in getting their hands dirty. 

Lake House guests will also be able to visit Dairy Flat Farm on scheduled tours to learn about the region’s produce and growing seasons; tours, classes, workshops and broader opportunities for learning will also be incorporated into the existing Lake House Cooking School program.
